  1. Preheat the oven to 350F. Lightly grease both mini-loaf pans with a non-stick cooking spray.
  2. Add bananas to the blender. Placing the bananas at the bottom of the blender will make blending the mixture easier.
  3. Add your rolled oats, eggs, cassava syrup, and baking soda. Blend the mixture until it’s smooth. Use either low or medium speed depending on the blender. If the mixture becomes difficult to blend, pulse until it loosens up.
  4. Pour the prepared batter into the mini-loaf pans. Bake between 25-35 minutes. Baking times will vary depending on the oven. Insert a toothpick in the middle and if it slides out clean, the banana bread is done.
  5. Cool for 10-15 minutes and the loaves should slide out easily. Cut into slices (around 5 per mini-loaf) and enjoy. Make sure to store leftovers in an airtight container to maintain freshness.
Recipe Notes

Instead of cassava syrup, you can use honey or maple syrup.

If you don’t have baking soda, you can use baking powder instead.  Just quadruple the recommended amount.  In this case, the recipe requires 1 tsp of baking soda = 4 tsp of baking powder.
